I am so in love with black beans right now. This recipe, courtesy of a good friend and fellow cook, gives me yet another option for delicious black beans and even better inexpensive, vegetarian eating. Enjoy!

Taco Soup
¾ of a pound ground beef or turkey (for a non-vegetarian option)
1 can of Garbanzo Chick Peas
1 small can of corn (plain or Mexican-style)
2 cans of Ranch Style Black Beans
2 cans of Rotel Tomatoes
1 package of taco seasoning
1 package of Hidden Valley Ranch seasoning
Brown meat, drain (rinse with hot water to get rid of excess fat), return meat to pot
Mix in taco seasoning and ranch dressing packets
Add canned vegetables without draining them. Simmer until heated. Don’t simmer too long. You don’t want your peas to get mushy.
Serve with cheese, onions, sour cream and tortilla chips if you like. It tastes good with cheese or crackers also.





Taco Soup is delish! A few years back when I was on Weight Watchers, this recipe was a staple, passed down from member to member. Quite tasty, even if prepared vegetarian style!!
This sounds really tasty!! I was a bit surprised to see Hidden Valley Ranch seasoning though. My girls love a good homemade soup once the weather turns chilly.
